We’re at the halfway mark of this Passover holiday so it’s time to break out the potatoes! I find that as the week of Passover goes by, I need to get more and more creative in the kitchen. Here are ten different ways to prepare potatoes.
1. Garlic Mashed Potatoes. Dress up your ordinary mashed potatoes with three cloves of garlic. Boil the garlic along with the potatoes. Mash it all together. Add some butter, milk and even a little Parmesan cheese.
2. Baked Potato Bar. This meal offers something to even my most finicky eaters. Prepare some baked potatoes and then set your table with a smorgasbord of toppings. In our house that ranges from cottage cheese, grated cheese, sour cream to tuna, grilled veggies and salsa. Be creative.
3. Twice Baked Potatoes. Bake your potatoes at 400 degrees for about an hour. Remove them from oven and when cooled, slice them in half. Scoop out most of the potato. Mash adding butter, sour cream, scallions, nutmeg and salt. Refill the potato shells. Sprinkle some cheese on the top. Bake at 375 for 20 minutes.
4. Cajun Potato Wedges. In a Ziploc bag, mix 2 Tbsp of olive oil, 2 tsp of cumin, 1 tsp paprika, 1 tsp turmeric, ½ tsp salt, ½ tsp pepper and ¼ tsp chili powder. Cut your potatoes into wedges. Add to the Ziploc bag. Shake until coated. Bake at 375 for 45 minutes.
5. Potato Soup. Use potatoes as the base to your next appetizer. Potato leek soup, vegetable soup in a cold soup will benefit from potatoes.
6. Hash Browns. Boil your potatoes first so they are softened up before you fry them. Fry some onions and then add your seasoned potatoes (think salt, pepper, garlic powder). Continue frying about 4 minutes each side.
7. Potato Salad. My favorite potato salad recipes all have Dijon mustard so I had to do some serious research to find a replacement. Try an oil and vinegar marinade with your next potato salad. Use ¼ c of each and then add salt, pepper, celery, green pepper, pickles, chives and some mayo for a Passover-friendly dish.
8. Honeyed Sweet Potatoes. I love when one recipe can do double-duty for the holidays. This sweet potato dish serves Passover and Rosh HaShana. Cut up your sweet potatoes and add 2 Tbsp of olive oil, 2 Tbsp of honey, 1 tsp of lemon juice and a pinch of salt. Bake at 350 for an hour.
9. Grilled Sweet Potato. Slice the sweet potato into circles. Feel free to add zucchinis, red peppers and mushrooms to the mix. Coat with equal parts balsamic vinegar and olive oil. Grill at 400 for 30-40 minutes. Serve with our Basil Mayonnaise Dip.
