Here's a potato salad that tastes closer to an "everything" bagel than it does to traditional potato salad. This dish is best when it's served fresh.

So much of what I make is "family friendly." Rarely do I make something just to indulge myself. Enter this diet strawberry smoothie. It's made with frozen strawberries (so you never have to worry if they are in season), fresca, sugar-free jello powder and ice. It's the perfect way for you and a friend to toast Tu B'Shvat, a hot summer night evening, or to make just for fun. When my kids see me break out the blender and the ingredients for this guilt-free treat, they know that it's "Eemee time", because of all of my special treats, this is one that I won't share with them.

Yield: Approximately 10 cups
This is not your traditional applesauce. For one, it calls for pears. And second, this fruit concoction is cooked in a good amount of honey. It takes just a few minutes to prepare. Serve it warm or cold, over latkes or as a stand-alone side dish. My kids like taking it to school for snack.
