This is a sophisticated version of a bean salad.
Serves: many.
Ingredients:
- 1 can of black beans
- 1 can of corn or frozen corn kernels
- 1 avocado peeled and diced
- 1 red pepper, diced
- 2 tomatoes seeded and diced
- 3 green onions, sliced
Dressing:
- 3 Tbsp lime juice
- 1 1/2 tsp lemon juice
- 3/4 tsp cumin
- 3/4 tsp chili powder
- 3/4 tsp salt
- 1/2 c. vegetable oil
This makes more dressing than necessary. You can store the extra for the next time – because there will definitely be a next time!
