This dish can be served as an appetizer, side dish or even a main course! Thanks to my friend Hildi for helping me brainstorm about the dressing.

Serves 6-8.

1 recipe of Oven Fried curried tofu
1 box (10 oz) couscous, prepared according the directions
1 mango, peeled, pitted and diced
1 large bunch red grapes, sliced in half

Apricot dressing:

½ c apricot jam/preserves
2 Tbsp lemon juice
1 Tbsp oil
2 Tbsp water
1/2 tsp salt


1. Lay couscous on a platter.

2. Arrange tofu, mango pieces and grapes over top.

3. Drizzle with apricot dressing or serve at the side
