Who doesn’t love a good cupcake?! These Sukkah cupcakes are easy to make. Use your favorite cake recipe to make cupcakes. My kids love this basic yellow cake recipe. They can make it almost entirely by themselves because most of the ingredients are pre-measured. These cupcakes are the perfect Sukkah project for big and little hands alike.

Ingredients:

For the cupcake:

  • 1 box yellow cake mix (the one I used is 18.25 oz)
  • 1 box vanilla pudding powder (the one I used is 3.4 oz)
  • 4 eggs
  • ½ c oil
  • ½ c water
  • 6 oz sour cream (to keep this non-dairy, I use Tofutti sour cream)
  • ¼ c rainbow sprinkles (to decorate the inside of your sukkah)

For the frosting:

  • 1 c shortening
  • 4 c powdered sugar
  • 4 Tbsp water
  • 1 tsp vanilla extract

For the schach:

Note: If you’re short on time, you can by the frosting and use plain pretzel sticks for the s’schach

Directions:

1. Preheat oven to 350
2. Line 24 muffin cups with paper liners
3. Mix all of the ingredients for the cupcakes until they are well blended. Spoon into muffin tins.
4. Bake for 22 minutes
5. While the cupcakes are baking, prepare the frosting and the s’chach. (Note: both of these components can be made ahead and refrigerated.)
6. Have the kids assemble all parts to build their own “sukkah”
