This flavor of this chicken comes from fruits!
2 chickens, cut into eighths
Salt and pepper, to taste
1 tsp ground ginger
1 ½ c. bitter orange marmalade
1/3 c. apple juice
1/3 c. orange juice
1 c. dried apricots
1 c. dried currants
¼ c. brown sugar
- Place the chicken in a roasting pan and sprinkle with salt, pepper and ginger.
- Add the marmalade and juices.
- Bake at 350 for 20 minutes.
- Add the apricots, currants and brown sugar.
- Baste the chicken every 15 minutes for another 40 minutes.
