This flavor of this chicken comes from fruits!

Serves 10.


2 chickens, cut into eighths

Salt and pepper, to taste

1 tsp ground ginger

1 ½ c. bitter orange marmalade

1/3 c. apple juice

1/3 c. orange juice


1 c. dried apricots

1 c. dried currants

¼ c. brown sugar



  1. Place the chicken in a roasting pan and sprinkle with salt, pepper and ginger.
  2. Add the marmalade and juices.
  3. Bake at 350 for 20 minutes.
  4. Add the apricots, currants and brown sugar.
  5. Baste the chicken every 15 minutes for another 40 minutes.
