Here’s a potato salad that tastes closer to an “everything” bagel than it does to traditional potato salad. This dish is best when it’s served fresh.

Serves 8.
Ingredients:

6-8 red potatoes, scrubbed (not peeled)
1 tsp dried minced onion
1 tsp dried minced garlic
1/2 tsp coarse salt (kosher or sea salt work just fine)
optional: 1/2 tsp each sesame and poppy seeds
3 Tbsp olive oil

Chopped scallions for garnish

Directions:

1. Boil potatoes in salted water for 15-32 minutes until tender. (A fork should pierce it easily).
2. Let cool.
3. Cut into chunks.
4. Toss olive oil and seasonings.
5. Garnish with scallions and serve.

Note: If you have leftovers and want to serve this dish again, simply sprinkle some more of the seasonings. Potatoes are notorious for absorbing salt and other distinct flavors.
