The fresh produce in this salsa makes it a summer must!  Adapted from Sirna’s Farm.

Serves 6.




2 c fresh corn (approx 4 ears)

1 tomato, diced

¼ onion, diced

¼ c green or red pepper, diced

2 Tbsp fresh cilantro, chopped

1 small hot jalapeno pepper, finely diced (optional)

Juice of 1 lime

¼ tsp salt




Combine all ingredients.

Keep refrigerated.
