Sweet potato latkes offer up some beta-carotene to offer up some health to our latkes!

Serves 5.


2 medium sweet potatoes, peeled and grated
½ onion
3 Tbsp lemon juice
1 tsp. salt
4 eggs
1/3 c flour


  1. Oil for frying.
  1. Peel and grate the sweet potatoes. Add the rest of the ingredients. Mix well.
  1. Heat the oil until it is very hot. Drop batter in tablespoonfuls, making sure to flatten down each latkes.
  1. Fry on both sides until golden brown.
  1. Serve with applesauce or sour cream.
