A lighter version of the standard zucchini kugel. A great addition to Shabbat or holiday meal.
Serves 8.
Ingredients:
3-4 medium zucchinis, diced into small pieces
2 onions, diced into small pieces
15 mushrooms, diced into small pieces
1 c flour
1 Tbsp baking powder
4 eggs
¾ c oil
salt and pepper to taste
Mix all the ingredients together.
Bake in a 9 x 13 pan for one hour.
