The rice and orzo combination makes this pilaf stand out!

Serves 6


¼ c olive oil
½ c uncooked rice
¼ c uncooked orzo pasta
½ c sliced fresh mushrooms
½ c chopped onion
¼ c minced celery
2 c pareve chicken broth 2 tsp parsley flakes
¼ tsp black pepper
½ c chopped/slivered toasted almonds


  1. Lightly toast almonds (either in a pan stovetop or in your oven at 350 for ten minutes). Keep a close eye on them.
  1. Place oil, rice, orzo and veggies in a saucepan on medium-low heat. Stir until the rice is lightly browned. Add broth, parsley and pepper. Bring to a boil and then reduce to a simmer. Cover and let simmer for 15 minutes. Add the almonds before serving.
